Smart Snack


Yield: 4 servings

1 ½ cups shredded carrots
¼ cup raisins
2 Tablespoon light mayonnaise
2 Tablespoon low-fat yogurt
½ Tablespoon lemon juice
1 Tablespoon honey
Dash salt

1. Soak the raisins in a cereal bowl of warm tap water (this plumps them up so they taste
better in the salad).
2. After soaking for a few minutes, drain the raisins and squeeze them dry with your hand.
3. In a medium bowl, combine the yogurt, mayonnaise, lemon juice, honey and salt.
4. Add the carrots and raisins; mix well.
5. Chill until serving time.
