Yields: 12 muffins (1 muffin per serving)
1¼ cups all-purpose flour
1 Tablespoon baking powder
¼ cup sucralose based non-nutritive sweetener + 1 T sugar
½ teaspoon salt
1 cup 100% bran cereal
1 cup non-fat milk
¼ cup vegetable oil
1. Preheat oven to 400° F.
2. Combine flour, baking powder, sugar, and salt; set aside.
3. In a mixing bowl, combine cereal and milk; let stand for 2 minutes. Add egg and oil; mix
